Social distancing has given me more time at home which equals more time in the kitchen.  It’s been great getting to try out new recipes in a more relaxed state of being. Even though it’s far from winter in Thailand, I’ve been craving some comfort foods these days.  And let’s be real, who doesn’t enjoy a good treat from time to time!

Remember comfort foods and cravings are not bad and they are not to be ignored or suppressed.  It’s all about balancing and when we restrict it leads to stress and even binging. I find that if I make healthier options of my favorites then my cravings are satisfied and I’m able to enjoy it and then move on guilt free.  

I ended up with a whole bundle of bananas that went ripe all at the same time.  Sometimes I peel the bananas and place them in the freezer for smoothies before they get too ripe or other times I make banana bread or banana muffins.

Cacao Gluten Free Banana Bread Recipe

Enjoy a healthy spin on a classic sweet treat.

Servings: 6 slices

Ingredients

  • 1 1/4 cup coconut flour
  • 3-4 medium sized over ripe bananas
  • 1 flax egg or real egg
  • 1/2 cup coconut oil
  • 1/2 cup coconut sugar
  • 1/4 cup dark chocolate chips
  • 2 tbsp raw organic cacao powder
  • 2 tsp baking powder
  • 2 tsp cinnamon
  • 1/2 tsp baking soda
  • 1 pinch salt

Instructions

  • Preheat the oven to 350°F / 175 C.
  • Mash bananas in a mixing bowl with a potato masher or a fork until smooth. Add egg and coconut oil together and stir well.
  • In a separate bowl, combine dry ingredients (coconut flour, baking powder, baking soda, cinnamon, cocoa powder, salt, sugar).
  • Add dry ingredients to banana mixture and mix until all ingredients are combined. Pour into a lightly greased loaf pan or small cast iron skillet.
  • Sprinkle the 60% dark chocolate chips on top of the mixture (optional).
  • Bake for 45 minutes, or until the top of the bread is firm and a toothpick comes out clean. Allow to cool before serving.

Notes

Serving size is based on using a small cast iron skillet.
