Superfood Overnight Oats

This is super easy to make and there are SO many flavor variations you can do with the superfood powders. Try out maca powder, cacao powder, matcha powder and cinnamon all separately and find what you like best!

Ingredients: 1 cup of roll oats, 2 cup of almond milk, ¼ cup of chia seeds, 2 tablespoons of either (maca, matcha, cacao or cinnamon).

Instructions: Put all the ingredients into a Tupperware at night and stir with a whisk. Then store in the fridge and enjoy the next morning. You can top with fruit of choice and even a nut butter drizzle if you desire. Chopped nuts or coconut flakes are other optional toppings.

Yogurt & Fruit

Super easy! Literally take greek or coconut yogurt and top with your choice of chopped fresh fruits, chia seeds and cinnamon. Option to add chopped nuts, coconut flakes or goji berries for a crunch.

Fruit Salad w/ Superfoods

Literally chop your choice of fruit into a bowl, drizzle with tahini, one tablespoon of ground flaxseed and one chopped date. Option to add cinnamon for more flavor.

Avocado & Ezekiel Bread

Slice up an avocado and mash across a toasted piece of Ezekiel bread.  For more flavor top with fresh cilantro and lime.  Optional to add an egg or hard boiled egg.

Breakfast Tacos

Heat black beans on the stove top and enjoy with two corn tortillas and fresh salsa. Lime and cilantro are great additions if you have time.

Veggie Scramble

Saute your choice of veggies (spinach, kale, peppers, etc) and enjoy with two eggs scrambled in. Toast is optional and try to go for Ezekiel or sourdough if available options.

Stir Fry Veggies & Avocado

Purchase pre-cut veggies to save time! Stir fry leafy greens of choice (kale, spinach, Swiss chard, etc.), broccoli, cauliflower, carrots, peppers, zucchini etc. Anything that sounds good to you. Chop up an avocado and mix it into the warm veggies in a bowl. Add in vegan cheese or feta cheese and top with cilantro and lime are optional or enjoy with fresh salsa.

Healthy Quinoa Porridge

This requires some cooking but you can make a big batch and then reheat or enjoy cool the next day or so. Check out the full recipe for a vegan protein rich breakfast.

Healthy Banana Bread Muffins

This requires some cooking but if you have a craving for something different this is a great healthy alternative than anything you will find at a store or restaurant since it only uses natural sugar and are gluten free. Try this healthy alternative recipe for your next weekend brunch!

Gluten Free Superfood Pancakes

I use Bob’s Redmill brand of gluten free mix. I’ll add in ½ cup of chia seeds and blueberries or banana. Instead of vegetable oil, use coconut oil. Instead of milk use almond milk. You might need to add some extra water if too thick. You can make the batter the night before and then it’s quick to cook in the morning. I’ll put nut butter and maple syrup or honey on top then enjoy!
